Résumé:	هدفت هذه الدراسة التي تتمحور حول سوسيولوجيا الطعام إلى التعريف بالطعام وأهميته في حياة الفرد وتطوره عبر العصور بحيث يتميز بعدة أنواع وطبوع ومن أجل التعرف عليه عن قرب والدخول في تفاصيله، كما هدفت الدراسة إلى عرض تنوع الطعام بين التقليدي والعصري وكيف تزاحم الطباخون وتنافس و على تطويره وتزيينه أكثر، حيث قمنا بتصميم مقابلة موجهة بناءا على نموذج الدراسة المعتمد، وقمنا بتوزيعها على عينة من مجتمع البحث الذي يتكون من السكان في مدينة تيارت وتم توزيع 15 وحدة وتحصلنا على 15 وحدة وقد قمنا بمعالجة بيانية بالاعتماد على التحليل الكمي والكيفي للمقابلة من أجل الإجابة على التساؤلات التالية : ما هي وظائف التي يؤديها الطعام في مدينة تيارت؟ وماهي هي عادات الطعام من أنماط، أدوات والمك ونات المستخدمة في إعداده خاص بالمجال الحضري لمدينة تيارت؟ وعند الإجابة على هذه التساؤلات ت وصلت الدراسة إلى مجم وعة من النتائج أهمها : الطبخ الجزائري خاصة في مدينة تيارت له جذور عتيقة وتاريخ عريق. يختلف الطعام حسب اختلاف المنطقة الجغرافية والمناخ وحسب تنوع منتوجاته واستخداماته الطعام له فوائد كبيرة على صحة الإنسان حيث يمد الجسم بالطاقة والقوة . الطعام رابط وثيق بين الأفراد حيث أنه يشيّد العلاقات الاجتماعية ويقويها.
Description:	This study، which revolves around the sociology of food، aimed at defining food and its importance in the life of the individual and its development through the ages، as it is characterized by several types and characteristics، in order to get to know it closely and enter into its details. The study also aimed to display the diversity of food between traditional and modern. And how the cooks crowded and competed to develop and decorate it more، as we designed a directed interview based on the approved study model، and we distributed it to a sample of the research community that consists of the population in the city of Tiaret، and 15 units were distributed، and we got 15 units. We did a graphical treatment based on the quantitative and qualitative analysis of the interview in order to answer the following questions: • What are the functions performed by food in the city of Tiaret ? • What are the food habits of patterns، tools and ingredients used in its preparation، especially in the urban area of the city of Tiaret ? In answering these questions، the study reached a set of results، the most important of which are: Algerian cooking، especially in the city of Tiaret، has ancient roots and a long history. Food varies according to the geographical area and climate، and according to the diversity of its products and uses. Food has great benefits for human health as it provides the body with energy and strength. Food is a close link between individuals as it builds and strengthens social relations.
